- Rinse the rice in a fine mesh sieve under cold running water until the water runs clear.
- Melt butter in a medium saucepan over medium heat. Add finely chopped onion and sauté for 5-7 minutes until golden brown.
- Add rinsed rice, chicken broth, whole milk, paprika, salt, and pepper to the saucepan. Stir to combine and bring to a gentle simmer.
- Cover and reduce heat to low. Let rice simmer for 18-20 minutes until liquid is absorbed and rice is tender.
- Remove from heat and stir in freshly grated cheddar cheese until melted. Fluff rice gently with a fork.
