Ingredients

  • 1 loaf 400g Italian or French bread, halved
  • 1/2 cup salted butter melted
  • 6 cloves garlic minced
  • 1 1/2 cups shredded mozzarella
  • 3/4 cup mayonnaise
  • 1 teaspoon Italian seasoning
  • 2 tablespoons fresh parsley chopped
  • 1 cup freshly grated parmesan
  • 1/4 teaspoon red pepper flakes

Method

 Prepare the Bread:
  1. Preheat oven to 400°F (200°C).
  2. Slice the bread loaf in half lengthwise and place it on a foil-lined baking sheet, cut side up.
2. Make the Butter Mixture:
  1. In a small bowl, mix the melted butter, minced garlic, red pepper flakes, and Italian seasoning.
  2. Use a pastry brush to generously coat the cut sides of the bread with this mixture.
3. Prepare the Cheese Topping:
  1. In another bowl, combine the shredded mozzarella, mayonnaise, and parsley.
  2. Spread the cheesy mixture evenly over the buttered bread.
4. Bake the Bread:
  1. Wrap the bread halves in aluminum foil to lock in moisture.
  2. Bake for 10 minutes.
5. Add the Parmesan Finish:
  1. Remove the bread from the oven and carefully open the foil.
  2. Sprinkle the parmesan evenly over the top.
  3. Return the bread to the oven, uncovered, and bake for an additional 5 minutes.
6. Optional Broil:
  1. For a golden, bubbly top, broil the bread for 1-2 minutes. Keep a close eye to prevent burning.
7. Rest and Serve:
  1. Let the bread rest for a few minutes to cool slightly.
  2. Slice into pull-apart sections and serve warm.
