Ingredients
  

  • 1 lb boneless skinless chicken breast, diced2 cups marinara sauce (store-bought or homemade)1½ cups uncooked rotini or penne pasta1¼ cups shredded mozzarella cheese¼ cup grated Parmesan cheese1½ cups water or chicken broth½ tsp garlic powder½ tsp Italian seasoningSalt and pepper, to tasteOptional: fresh basil or parsley for garnish

Method
 

  1. Preheat oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
  2. In the baking dish, mix together uncooked pasta, diced raw chicken, marinara sauce, water or broth, garlic powder, Italian seasoning, salt, and pepper. Stir until well combined.
  3. Cover tightly with foil and bake for 35 minutes.
  4. Remove foil, sprinkle mozzarella and Parmesan evenly over the top.
  5. Bake uncovered for an additional 10-15 minutes, or until pasta is tender and cheese is bubbly and golden.

  7. Let sit for 5 minutes before serving. Garnish with fresh herbs if desired.

Notes

  • Swap chicken breast for pre-cooked rotisserie chicken to save even more time.
  • Use whole wheat pasta for added fiber.
  • Add sautéed mushrooms or spinach to sneak in extra veggies.
  • Freezes well after baking—perfect for meal prep.
