Method
Cook the Chicken:
- Season both sides of the chicken breasts with salt and pepper.
- Heat 1 tablespoon of olive oil in a skillet over medium-high heat.
- Cook the chicken for 6-7 minutes on each side, or until fully cooked.
- Remove from heat and let rest for a few minutes before slicing thinly.
Prepare the Bread:
- Spread mayonnaise on one side of each bread slice and Dijon mustard on the other.
Assemble the Sandwich:
- On two slices of bread (mayonnaise side up), layer the sliced chicken, avocado, cheese, red onion, and tomato.
- Top with the remaining bread slices (Dijon side down).
Grill the Sandwich:
- Heat a skillet or grill pan over medium heat and add butter or olive oil.
- Place the sandwiches in the pan and cook for 3-4 minutes on each side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted.
Serve:
- Remove the sandwiches from the skillet, let them cool for a minute, and slice in half.
- Serve warm with your favorite sides or dips.
