Ingredients
  

For the Cookies:
  • 3/4 cup butter softened
  • 1/3 cup granulated sugar
  • 1/3 cup brown sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups graham cracker crumbs plus 1/2 cup for rolling
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1/2 tsp baking powder
For the Cream Cheese Frosting:
  • 8 oz cream cheese softened
  • 8 oz butter softened
  • 2 1/2 cups powdered sugar
  • 2 tsp vanilla extract
For the Salted Caramel Topping:
  • 1 1/4 cups brown sugar
  • 1/2 cup whipping cream
  • 5 tbsp butter
  • 1 tbsp vanilla extract
  • 1/4 tsp salt

Method
 

Prepare the Cookies:
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in eggs one at a time, then mix in vanilla extract.
  4. Gradually add flour, salt, baking soda, and baking powder. Mix until just combined.
  5. Fold in 1 1/2 cups graham cracker crumbs.
  6. Roll dough into balls, coat with remaining 1/2 cup graham cracker crumbs, and flatten slightly.
  7. Place on baking sheets and bake for 8-10 minutes. Let cool on a wire rack.
Make the Frosting:
  1. Beat cream cheese and butter until smooth.
  2. Gradually mix in powdered sugar and vanilla extract until creamy.
Prepare the Salted Caramel:
  1. Combine brown sugar, whipping cream, and butter in a saucepan over medium heat. Stir until bubbling.
  2. Reduce heat and simmer for 4-5 minutes until thickened. Remove from heat and stir in vanilla and salt. Cool slightly.
Assemble the Cookies:
  1. Spread frosting on each cooled cookie.
  2. Drizzle salted caramel over the frosting. Let set for 15 minutes.

  • Adjust caramel consistency with cream if needed.
  • Store assembled cookies in the refrigerator; bring to room temperature before serving.
