Directions
  1. Prepare the apples by peeling, coring, and finely chopping about six cups of a mix of tart and sweet apples. Set aside.
  2. Combine chopped apples, granulated sugar, light brown sugar, lemon juice, cinnamon, nutmeg, and salt in a heavy-bottomed saucepan.
  3. Cook the mixture on medium-high heat until it boils, then reduce to medium-low and simmer for about 25 minutes, stirring regularly.
  4. Remove from heat and stir in vanilla extract and caramel sauce until fully incorporated.
  5. Blend the jam to your desired texture using an immersion blender or potato masher.
  6. Jar the jam while hot, leaving half an inch of space at the top, then secure lids tightly.
  7. Process sealed jars in a boiling water bath for 10 minutes for long-term storage.
