- Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
 
Prepare the Crust:
- In a bowl, combine graham cracker crumbs, sugar, and cinnamon.
 - Pour in melted butter and mix until the mixture resembles wet sand.
 - Press the mixture firmly into the bottom of the prepared pan.
 - Bake for 8–10 minutes, then let cool.
 
Make the Cheesecake Layer:
- Beat softened cream cheese until smooth.
 - Add sugar and vanilla extract, mixing until well combined.
 - Blend in flour until incorporated.
 - Add egg and mix on low speed until just combined.
 - Spread the cheesecake mixture evenly over the cooled crust.
 
Prepare the Apple Filling:
- Toss chopped apples with lemon juice, cinnamon, nutmeg, brown sugar, and cornstarch.
 - Cook the mixture in a skillet over medium heat for 3–5 minutes, until apples begin to soften.
 - Let the filling cool slightly, then spread it over the cheesecake layer.
 
Make the Crumb Topping:
- In a bowl, combine flour, brown sugar, oats, cinnamon, and nutmeg.
 - Drizzle in melted butter and mix until crumbly.
 - Sprinkle the topping evenly over the apple layer.
 
Bake the Bars:
- Bake for 25–30 minutes, or until the topping is golden brown and the cheesecake is set.
 - Cool completely before slicing into bars for clean cuts.
