Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a medium bowl, combine the diced peaches, bourbon, honey, soy sauce, olive oil, Dijon mustard, garlic powder, black pepper, and salt. Mix well until the ingredients are fully incorporated.
  3. Place the salmon fillets on the prepared baking sheet, skin-side down. Spoon the peach mixture evenly over the top of each fillet.
