  • 3 cups Bread Flour Provides texture

  • 1 cup Avocado Oil For frying
  • 1 cup Fresh or Frozen Blueberries Use fresh if possible
For the Glaze
  • 2 cups Powdered Sugar Base for the glaze
  • 2 tbsp Lemon Juice Brightens flavor

Method
 

Preparation
  1. Warm your milk to around 110F, mix with granulated sugar and active dry yeast. Let sit for 5 to 7 minutes.
  2. In a mixing bowl, combine bread flour, Greek yogurt, eggs, melted butter, and salt. Add yeast mixture once frothy.
  3. Knead dough on a floured surface until smooth. Let rise in a greased bowl for 1 to 1.5 hours.
  4. Fold in fresh blueberries and shape dough into fritters about 2 inches wide.
  5. Refrigerate shaped fritters for 30 minutes while heating oil to 360F-375F.
  6. Fry fritters for 3-4 minutes on each side until golden brown. Drain on paper towels.
  7. Melt salted butter in a saucepan, whisk in powdered sugar, lemon juice, and lemon zest until smooth.
  8. Dip warm fritters into the glaze and let excess drip off before serving.
  9. Serve immediately for the best flavor and texture.
