Preparation
- Warm your milk to around 110F, mix with granulated sugar and active dry yeast. Let sit for 5 to 7 minutes.
- In a mixing bowl, combine bread flour, Greek yogurt, eggs, melted butter, and salt. Add yeast mixture once frothy.
- Knead dough on a floured surface until smooth. Let rise in a greased bowl for 1 to 1.5 hours.
- Fold in fresh blueberries and shape dough into fritters about 2 inches wide.
- Refrigerate shaped fritters for 30 minutes while heating oil to 360F-375F.
- Fry fritters for 3-4 minutes on each side until golden brown. Drain on paper towels.
- Melt salted butter in a saucepan, whisk in powdered sugar, lemon juice, and lemon zest until smooth.
- Dip warm fritters into the glaze and let excess drip off before serving.
- Serve immediately for the best flavor and texture.
