- Rinse 2 cups of uncooked rice under cold water until the water runs clear. Cook the rice according to package instructions and refrigerate overnight.
- Heat 2 tablespoons of oil in a large deep frying pan or wok over medium heat. Add 1 finely diced onion and 3 crushed garlic cloves, sauté for 3-5 minutes until translucent.
- Add 500 grams of minced beef and 1 diced red bell pepper to the pan, breaking up the meat as it cooks for 5-7 minutes.
- Mix in 2 tablespoons of sambal oelek, 1 tablespoon of shrimp paste, 2 tablespoons of soy sauce, and 1 tablespoon of maple syrup. Stir for 2 minutes.
- Add the chilled cooked rice to the pan, breaking apart any clumps. Stir-fry for approximately 5 minutes.
- Once the rice is hot, fold in 2 chopped spring onions and stir for an additional minute.
- In a separate pan, heat 1 tablespoon of oil and fry 2 eggs sunny-side up for 2-3 minutes until the whites are set.
- Plate the Beef Nasi Goreng topped with the fried eggs, garnished with spring onions and cilantro. Serve with sliced cucumbers and tomatoes.
