For the Vegetables
  • 1 medium red bell pepper chopped
  • 1 can pineapple tidbits or fresh pineapple chunks

Step-by-Step Instructions
  1. Preheat the oven to 325°F (163°C) and grease a baking pan lightly with oil.
  2. Cut chicken into bite-sized pieces, season with salt and pepper.
  3. Set up two bowls: one for cornstarch and another for beaten eggs.
  4. Dredge chicken pieces in cornstarch, then dip in beaten eggs.
  5. Heat vegetable oil in a skillet, fry chicken until golden-brown, about 4-5 minutes per side.
  6. Transfer chicken to the baking dish evenly.
  7. Whisk together pineapple juice, brown sugar, soy sauce, garlic, and additional cornstarch in a bowl.
  8. Pour sauce over chicken, top with red bell pepper and pineapple tidbits.
  9. Bake uncovered for 1 hour, stirring every 15 minutes.
  10. Allow to rest for 5 minutes after baking before serving.
