Description

Crispy, cheesy, and topped with savory bacon, these Loaded Smashed Potatoes are a flavor-packed twist on classic baked potatoes. They’re easy to make and perfect as an appetizer, side dish, or snack. Get ready for a crispy, gooey, and utterly delicious bite in every mouthful!

Ingredients

  • 2 pounds baby yellow potatoes
  • Kosher salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • ¾ cup shredded cheddar cheese
  • ⅓ cup sour cream
  • 4 slices bacon, diced
  • 2 tablespoons chopped fresh chives

Instructions

  1. Preheat & Prep – Preheat the oven to 450°F. Lightly oil a baking sheet or coat with nonstick spray.
  2. Boil & Soften – Place potatoes in a Dutch oven and cover with cold salted water by 1 inch. Bring to a boil and simmer until just tender, about 15 minutes. Drain and let cool slightly.
  3. Smash & Season – Arrange potatoes on the baking sheet. Using a flat measuring cup, glass, or your hand, carefully smash each potato while keeping them mostly intact. Brush with olive oil and season with salt and pepper.
  4. Bake to Perfection – Bake for 25-30 minutes, or until golden brown and crispy.
  5. Cheesy Upgrade – Sprinkle each potato with shredded cheddar cheese and return to the oven for 2-3 minutes, just until the cheese melts.
  6. Bacon Bliss – While the potatoes are baking, cook diced bacon in a large skillet over medium-high heat until crispy (about 6-8 minutes). Transfer bacon to a paper towel-lined plate to drain excess grease.
  7. Final Touches – Top each crispy potato with a dollop of sour cream, crispy bacon, and fresh chives.
  8. Serve & Enjoy – Best served immediately while warm and crispy!

Notes

  • For extra crispiness, bake an additional 5 minutes before adding cheese.
  • Try different cheeses like mozzarella, gouda, or pepper jack for variety.
  • Make it vegetarian by omitting bacon and adding sautéed mushrooms or caramelized onions.
  • Serve with a side of ranch or hot sauce for an extra kick.
