Ingredients

  • 1 tablespoon olive oil
  • ½ white onion, diced
  • 1 stalk celery, chopped
  • ½ cup shredded carrots
  • 2 teaspoons minced garlic
  • 4 cups low-sodium chicken broth
  • 3 cooked boneless, skinless chicken breasts, diced
  • 1 teaspoon thyme
  • 16 oz potato gnocchi
  • 2 cups half and half
  • 1 cup fresh spinach, roughly chopped
  • Salt and pepper to taste

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Sauté onions, celery, and carrots for 3-5 minutes until softened.
  • Add garlic and cook for another 30 seconds until fragrant.
  • Pour in chicken broth and bring to a gentle simmer.
  • Stir in chicken and thyme, simmering for 5-10 minutes.
