Ingredients
- 1 tablespoon olive oil
- ½ white onion, diced
- 1 stalk celery, chopped
- ½ cup shredded carrots
- 2 teaspoons minced garlic
- 4 cups low-sodium chicken broth
- 3 cooked boneless, skinless chicken breasts, diced
- 1 teaspoon thyme
- 16 oz potato gnocchi
- 2 cups half and half
- 1 cup fresh spinach, roughly chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté onions, celery, and carrots for 3-5 minutes until softened.
- Add garlic and cook for another 30 seconds until fragrant.
- Pour in chicken broth and bring to a gentle simmer.
- Stir in chicken and thyme, simmering for 5-10 minutes.
- Add gnocchi and cook for 2-4 minutes until tender.
- Reduce heat and stir in half and half, followed by chopped spinach.
- Season with salt and pepper to taste.
