Ingredients

For the Crust:

  • 1 cup chopped strawberries
  • ½ cup strawberry Jell-O powder
  • 1 cup crushed graham crackers
  • ½ cup unsalted butter, melted

For the Strawberry Pink Cream Icing:

  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • ¼ cup heavy cream (adjust as needed)
  • 1 tsp vanilla extract
  • ½ cup fresh strawberries, pureed (or strawberry syrup)
  • Few drops pink food coloring (optional)

Instructions

  • Prepare the Crust:
    • Preheat the oven to 325°F (160°C).
    • In a mixing bowl, combine graham cracker crumbs and melted butter. Mix until the texture resembles wet sand.
    • Line a mini muffin pan with cupcake liners. Spoon a small amount of the crumb mixture into each liner and press firmly to form the crust.
  • Make the Cheesecake Filling:
    • In a large bowl, beat the softened cream cheese until smooth.
    • Mix in the sugar and vanilla extract.
    • Add eggs one at a time, mixing just until combined.
    • Fold in the pureed strawberries and flour.
  • Bake the Cheesecake Bites:
    • Spoon the cheesecake filling over the crust in each liner, filling about three-quarters full.
    • Bake for 18-22 minutes, or until the centers are set.
    • Let the bites cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  • Prepare the Crunch Topping:
    • In a bowl, mix chopped strawberries, Jell-O powder, crushed graham crackers, and melted butter.
    • Press a small amount of the crunch mixture onto the tops of the cooled cheesecake bites.
  • Make the Icing:
    • Beat the softened butter until smooth and fluffy.
