Ingredients
- 8 slices thick-cut bacon
- 4 slices sourdough bread
- 4 tablespoons softened butter
- 2 tablespoons mayonnaise (optional)
- 4 ounces sharp cheddar cheese, shredded (about 1 cup)
- 4 ounces mozzarella cheese, shredded (about 1 cup)
- 1 large ripe tomato, sliced
- 4–8 leaves butter lettuce
Instructions
- Prepare the Bacon:
- Preheat your oven to 400°F.
- Line a baking sheet with foil and arrange the bacon slices in a single layer. Bake for 15-20 minutes, flipping halfway through, until crispy.
- Transfer the bacon to a plate lined with paper towels to drain.
- Prepare the Bread:
- Spread butter on one side of each bread slice. Preheat a skillet or griddle over medium heat.
- Toast the Bread:
- Place the bread slices butter-side down in the skillet. Spread mayonnaise on the top sides if desired.
- Toast for 2-3 minutes or until golden brown.
- Add the Cheese:
- Flip the bread slices over and sprinkle the cheddar and mozzarella evenly over all slices.
- Cover the skillet with a lid and cook for 2-3 minutes until the cheese is melted.
- Assemble the Sandwich:
- Remove the bread slices from the skillet. On two slices, layer crispy bacon, tomato slices, and lettuce.
- Top with the remaining slices, cheese side down, to form two sandwiches.
- Serve:
- Let the sandwiches cool slightly, then slice in half and serve warm with your favorite sides.
