Instructions

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Lightly grease a quiche pan or pie dish with cooking spray to prevent sticking.
  2. Cook the Sausage:
    • Heat a skillet over medium heat and add the ground sausage. Cook until browned and fully cooked, breaking it up with a spatula.
    • Drain any excess grease using a paper towel. Remove the sausage from the heat.
  3. Add Hash Browns:
    • In the same skillet, add the frozen hash browns. Cook for 2-3 minutes until heated through, adding a little oil if needed to prevent sticking.
    • Stir the cooked sausage back into the skillet with the hash browns and mix well.
  4. Prepare the Egg Mixture:
    • In a large mixing bowl, beat the eggs until smooth.
    • Stir in the sausage and hash brown mixture, taco seasoning, 1/4 cup of shredded cheese, and chopped grape tomatoes. Mix until well combined.
  5. Assemble the Frittata:
    • Pour the egg mixture into the prepared quiche or pie dish.
    • Use a fork to gently arrange the ingredients evenly in the dish.
    • Sprinkle an additional 1/4 cup of shredded cheese on top for a golden finish.
  6. Bake the Frittata:
    • Place the dish in the preheated oven and bake for 22-26 minutes. The eggs should be fully set but still moist.
    • Check the frittata at the 22-minute mark to avoid overcooking.
  7. Serve and Enjoy:
