Description

If you can’t decide between brownies and cookies, why not have both? These fudgy chewy browkies combine the rich, gooey texture of a brownie with the crisp edges and chew of a cookie. Loaded with dark chocolate, butter, and just the right amount of chewiness, they’re a chocolate lover’s dream! Perfect for sharing or indulging solo.


Ingredients

Dry Ingredients:

  • ¾ cup (95g) all-purpose flour
  • 2 tbsp cocoa powder
  • 1 tsp baking powder
  • ¼ tsp salt

Wet Ingredients:

  • 1¼ cups (225g) dark chocolate, chopped
  • ¼ cup (56g) butter, melted
  • 2 eggs (room temperature)
  • ¾ cup (100g) caster sugar
  • ½ cup (90g) demerara sugar
  • 1 tsp vanilla extract
  • ½ cup (85g) dark or milk chocolate chips

Instructions

  1. Preheat & Prep – Preheat oven to 350°F (175°C). Line a baking tray or pan with parchment paper.
  2. Melt Chocolate & Butter – In a microwave-safe bowl, melt the dark chocolate and butter in 20-second intervals, stirring in between. Let cool slightly.
  3. Mix Wet Ingredients – In a large bowl, whisk together eggs, caster sugar, and demerara sugar until pale. Stir in vanilla extract and melted chocolate mixture.
  4. Combine Dry Ingredients – In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt. Gradually fold into the wet ingredients.
  5. Add Chocolate Chips – Gently fold in chocolate chips for an extra chocolatey bite.
  6. Bake – Pour the batter into the prepared pan. Bake for 20–25 minutes, until the edges are set but the center remains slightly soft.
  7. Cool & Serve – Let cool for 10 minutes before slicing. Enjoy warm for a gooey treat or let them firm up for a chewy bite!

Notes

  • For fudgier browkies – Slightly underbake them and let them set outside the oven.
  • For extra chewiness – Use brown sugar instead of all white sugar.
