Ingredients

  • 3 cups shredded zucchini
  • ½ teaspoon salt
  • 4 large eggs, lightly beaten
  • 1 cup baking mix (e.g., Bisquick)
  • ½ cup finely chopped sweet onion
  • ½ cup melted butter
  • ½ cup shredded white Cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh parsley, chopped
  • ½ teaspoon black pepper

Instructions

. Prep the Zucchini

  1. Shred the zucchini using a box grater or food processor.
  2. Sprinkle the zucchini with salt and let it sit for 15 minutes.
  3. Transfer the zucchini to a clean kitchen towel and squeeze out excess moisture to avoid a soggy pie.

2. Preheat and Prepare the Dish

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch pie plate or baking pan with cooking spray or melted butter.

3. Mix the Ingredients

  1. In a large bowl, combine the zucchini, eggs, baking mix, onion, melted butter, Cheddar cheese, Parmesan cheese, rosemary, parsley, and black pepper.
  2. Stir until evenly mixed.

4. Assemble the Pie

  1. Pour the mixture into the prepared pie plate and smooth the top with a spatula for even baking.

5. Bake

  1. Bake in the preheated oven for about 45 minutes, or until the top is golden brown and a knife inserted into the center comes out clean.

6. Serve

  • Allow the pie to cool for 5-10 minutes before slicing.
  • Serve warm or at room temperature for the best flavor.

Notes

  • Ensure you thoroughly drain the zucchini to avoid excess moisture.
  • This pie can be served warm, cold, or at room temperature, making it a versatile dish for any meal or occasion.
