Description

This cozy and creamy Pioneer Woman Chicken Noodle Casserole is the ultimate comfort food—packed with tender chicken, hearty egg noodles, creamy soup, and a buttery cracker topping. It’s a satisfying, all-in-one dish that’s perfect for feeding the whole family on a busy weeknight or bringing to a potluck.


Ingredients

12 oz wide egg noodles
2 cans (10.5 oz each) cream of chicken soup
1 cup whole milk
1 cup shredded sharp cheddar cheese
1 teaspoon ground black pepper
1/2 teaspoon kosher salt
3 cups cooked, shredded chicken (1 rotisserie chicken works great)
1/2 small yellow onion, finely chopped
2 celery stalks, finely chopped
1 bag (12 oz) frozen peas and carrots, thawed
1 1/2 cups coarsely crushed butter crackers (about 1 sleeve, such as Ritz)
2 tablespoons unsalted butter, melted Chopped parsley, for garnish


Instructions

  • Preheat oven to 375°F (190°C).

  • Cook noodles: Bring a large pot of salted water to a boil. Cook the egg noodles until just al dente, about 7 minutes. Drain and set aside.

  • Mix filling: In a large bowl, whisk together the cream of chicken soup, milk, cheddar cheese, pepper, and salt.

  • Add ingredients: Stir in the shredded chicken, chopped onion, celery, and thawed peas and carrots. Gently fold in the cooked noodles until everything is evenly mixed.

  • Assemble: Transfer the mixture into a 9×13-inch baking dish, spreading it evenly.

  • Make topping: In a separate bowl, toss the crushed butter crackers with the melted butter. Sprinkle this mixture evenly over the casserole.

  • Bake: Place the dish in the oven and bake for 30 to 35 minutes, or until bubbly and golden brown on top.

 

  • Garnish & serve: Remove from the oven and garnish with chopped parsley before serving.

  • Chicken tip: A store-bought rotisserie chicken cuts down on prep time and adds great flavor.
