Ingredients
- 1 lb (450 g) ground beef
- 1 packet taco seasoning (or 2 tbsp homemade)
- 1/2 cup (120 ml) water
- 1 can (10 oz / 280 g) Rotel tomatoes (diced with chilies)
- 1 can (10.5 oz / 300 g) cream of chicken soup
- 1 can (10.5 oz / 300 g) cream of mushroom soup
- 1/2 cup (120 ml) sour cream
- 1 1/2 cups (170 g) shredded cheddar cheese
- 1 1/2 cups (170 g) shredded Monterey Jack cheese
- 6 small tortillas (flour or corn), cut into quarters

- Sliced green onions
- Chopped cilantro
- Diced avocado
- Extra sour cream
Instructions
- Preheat Oven:
Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish. - Cook Ground Beef:
In a skillet, cook ground beef over medium heat until browned. Drain excess grease, then stir in taco seasoning and water. Simmer for 2-3 minutes. - Prepare Creamy Mixture:
In a bowl, mix Rotel tomatoes, cream of chicken soup, cream of mushroom soup, and sour cream until well blended. - Assemble the Casserole:
- Spread a small amount of the creamy mixture on the bottom of the dish.
- Layer tortilla quarters to cover the bottom.
- Add half the ground beef, then half the creamy mixture.
- Sprinkle half of the shredded cheeses.
- Repeat layers, ending with cheese on top.
- Bake:
Cover with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes, or until the cheese is melted and bubbly. - Garnish and Serve:
Let the casserole cool for 5 minutes. Garnish with green onions, cilantro, avocado, or sour cream. Serve warm.
