Description

This Chicken Burrito Casserole is everything you love about a loaded burrito—baked into one easy, cheesy, crowd-pleasing dish! Packed with protein, veggies, and bold Tex-Mex flavor, it’s a one-pan wonder perfect for weeknight dinners or meal prep.


Ingredients

For the Casserole:
3 cups cooked chicken breast, shredded or chopped
1½ cups cooked brown rice
1 (15 oz) can black beans, drained and rinsed
1 (14 oz) can diced tomatoes
1 cup corn kernels (frozen or canned)
½ cup red bell pepper, chopped
½ cup green bell pepper, chopped
1 small onion, chopped
1 cup salsa (choose your desired spice level)
1½ teaspoons chili powder
1 teaspoon cumin
½ teaspoon garlic powder Salt and pepper, to taste
1½ cups shredded cheese (cheddar or Mexican blend)

Optional Garnishes:
Fresh cilantro Greek yogurt or sour cream Diced avocado or guacamole


Instructions

  1. Preheat oven to 375°F (190°C).

  2. Mix ingredients: In a large mixing bowl, combine chicken, rice, black beans, diced tomatoes, corn, red and green bell peppers, onion, salsa, chili powder, cumin, garlic powder, salt, and pepper. Stir until everything is well mixed.

  3. Assemble casserole: Spread the mixture evenly into a 9×13-inch baking dish.

  4. Add cheese: Sprinkle the shredded cheese evenly over the top.

  5. Bake: Place the casserole in the oven and bake uncovered for 20 to 25 minutes, or until the cheese is melted and bubbly.

  6. Garnish and serve: Top with cilantro, avocado, or a dollop of Greek yogurt or sour cream before serving, if desired.
