  • 1 lb gnocchi
  • 1 1/4 cups frozen peas and carrots
  • 1 tbsp cornstarch
  • 5 lb rotisserie chicken, diced
  • 1 1/2 tsp garlic powder
  • 1 1/2 tsp onion powder
  • 2 tsp chicken bouillon
  • 1 1/2 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Garnish: Fresh chopped parsley

Instructions

  1. Sauté the Aromatics – In a large Dutch oven over medium-high heat, warm the olive oil. Add the chopped onion and bell pepper, cooking until softened (about 5 minutes). Stir in the minced garlic and cook until fragrant (2-3 minutes).
  2. Build the Base – Reduce the heat to medium, then add butter. Once melted, sprinkle in the flour and stir until the mixture becomes clumpy.
  3. Simmer to Perfection – Gradually pour in the chicken broth, stirring to dissolve any lumps. Let the mixture simmer for 5-7 minutes until it thickens. Add the diced rotisserie chicken and stir well.
  4. Enhance the Flavor – Stir in the peas, carrots, garlic powder, onion powder, chicken bouillon, dried thyme, oregano, salt, and pepper.
  5. Cook the Gnocchi – Add the gnocchi directly into the soup. In a small bowl, mix the cornstarch with a tablespoon of soup liquid, then stir it back into the pot to help thicken.
  6. Let It Simmer – Cover the pot and allow the soup to simmer for at least 30 minutes, allowing the flavors to meld.
