Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled (optional)
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, and parsley.
- In a separate small bowl, whisk together the olive oil, lemon juice, garlic powder, salt, and black pepper until well combined.
- Pour the dressing over the salad mixture and toss gently to combine.
- If using, sprinkle the feta cheese on top and give it a light toss.
- Let the salad sit for at least 15 minutes to allow the flavors to meld. Serve chilled or at room temperature.
