Description
A quick and delicious recipe for Turkey Fried Rice, perfect for using up leftover turkey.
Ingredients
- 3 cups cooked rice (preferably day-old)
- 2 cups cooked turkey, shredded or diced
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 tablespoons vegetable oil
- 3 green onions, chopped
- 2 cloves garlic, minced
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the mixed vegetables to the skillet and stir-fry for 2-3 minutes until they are heated through.
- Push the vegetables to one side of the skillet and pour the beaten eggs into the empty side. Scramble the eggs until fully cooked, then mix them with the vegetables.
- Add the cooked rice and turkey to the skillet. Pour the soy sauce and sesame oil over the mixture. Stir everything together and cook for an additional 3-4 minutes, allowing the rice to heat through and absorb the flavors.
- Stir in the chopped green onions, and season with salt and pepper to taste. Cook for another minute, then remove from heat.
Notes
- For added flavor, consider marinating the turkey in soy sauce and ginger before adding it to the fried rice.
- Substitute the mixed vegetables with any of your favorites, such as bell peppers, broccoli, or snap peas, for a personalized touch.
