Ingredients

  • 1 cup shortening
  • 1 cup confectioners’ sugar
  • 1 large egg, room temperature
  • 1 teaspoon peppermint extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon salt
  • Green paste food coloring
  • Green colored sugar (optional)

Instructions

  1. Whip Up the Dough:
    • Preheat oven to 375°F.
    • In a large bowl, cream together the shortening and confectioners’ sugar until light and fluffy (about 3–4 minutes).
    • Beat in the egg and peppermint extract.
    • Gradually add the flour and salt, mixing well.
    • Tint the dough with green food coloring.
    • Cover and refrigerate for one hour or until firm enough to handle.
  2. Shape the Lucky Clovers:
    • On a lightly floured surface, roll out the dough to ¼-inch thickness.
    • Use a 2-inch shamrock-shaped cookie cutter to cut out the cookies.
    • Place cookies 1 inch apart on ungreased baking sheets.
    • If desired, sprinkle with green colored sugar for an extra festive touch.
  3. Bake to Perfection:
    • Bake for 10–12 minutes or until the edges are lightly browned.
    • Let the cookies cool on the baking sheet for 1 minute before transferring to wire racks to cool completely.
