Description

This vibrant, crunchy snack mix is packed with sweetness, color, and a hint of magic! Perfect for St. Patrick’s Day celebrations or any occasion that calls for a festive and irresistible treat. A delightful blend of cereals, pretzels, candy coating, and sprinkles makes this snack a true crowd-pleaser!

Ingredients

  • Lucky Charms Cereal – 1 (10.5 oz) box (separate 2 cups marshmallows and 6 cups cereal)
  • Rice Chex Cereal – 3 cups
  • Pretzel Snaps (or Mini Pretzels) – 2 cups
  • Vanilla Candy Coating or Vanilla Almond Bark – 1 (16 oz) package (or 20 oz of almond bark)
  • Rainbow Jimmies (Sprinkles) – 1 (2 oz) container
  • Trix Minis Cereal (or any rainbow-colored cereal) – 2 cups

Instructions

  1. Sort the Magic: Separate the Lucky Charms marshmallows from the cereal. Set aside 2 cups of marshmallows and 6 cups of cereal.
  2. Mix It Up: In a large bowl, combine the 6 cups of Lucky Charms cereal (without marshmallows), Rice Chex cereal, and pretzels.
  3. Melt the Magic: In a microwave-safe bowl, melt the candy coating according to the package instructions (usually 1-2 minutes, stirring every 30 seconds until smooth). Be careful not to overheat, as it can burn and thicken too much.
  4. Coat with Sweetness: Pour the melted candy coating over the cereal mixture and toss gently with a large spoon until evenly coated.
  5. Spread the Magic: Lay the mixture in an even layer on parchment paper.
  6. Add the Sparkle: Immediately sprinkle with rainbow jimmies, then top with Trix Minis and the reserved Lucky Charms marshmallows.
  7. Let It Set: Allow the mix to cool completely before breaking it apart into bite-sized pieces.
  8. Store for Snacking: Keep in an airtight container or plastic bag at room temperature for up to two weeks.

Notes

  • Use any brightly colored cereal for extra visual appeal.
  • For a richer flavor, try white chocolate instead of vanilla candy coating.
  • Store in an airtight container to keep the mix fresh and crispy.
  • Perfect for gifting or serving at parties!
