Description

Tandoori Shrimp Skewers are a flavorful and juicy dish marinated in a blend of spices and yogurt, perfect for grilling.

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 2 tablespoons vegetable oil
  • 2 tablespoons tandoori spice mix
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon chopped fresh cilantro (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. In a large bowl, combine the yogurt, lemon juice, vegetable oil, tandoori spice mix, garlic, ginger, salt, black pepper, and paprika. Mix well to create a marinade.
  2. Add the shrimp to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  4. Thread the marinated shrimp onto the skewers, leaving a little space between each shrimp for even cooking.
  5. Place the skewers on the grill and cook for about 2-3 minutes on each side, or until the shrimp are opaque and cooked through.
  6. Remove the skewers from the grill and let them rest for a couple of minutes. Garnish with chopped cilantro and serve with lemon wedges.

Notes

  • For a spicier kick, add a teaspoon of cayenne pepper to the marinade.
  • For a vegetarian option, substitute shrimp with cubed tofu or vegetables like bell peppers and zucchini.
