Description
A refreshing salad combining sweet corn and ripe peaches, perfect for summer gatherings.
Ingredients
- 2 cups fresh corn kernels (about 4 ears of corn)
- 2 ripe peaches, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1/4 cup fresh basil, chopped
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon honey
- Salt and pepper to taste
Instructions
- Start by cooking the corn. If using fresh corn, bring a pot of water to a boil, add the corn, and cook for 3-5 minutes until tender. Drain and let cool. If using frozen corn, simply thaw it and set aside.
- In a large mixing bowl, combine the cooled corn, diced peaches, cherry tomatoes, red onion, and fresh basil.
- In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper until well combined.
- Pour the dressing over the salad mixture and toss gently to combine all ingredients evenly.
- Sprinkle the crumbled feta cheese on top and give it one last gentle toss.
- Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
Notes
- For added crunch, consider mixing in some diced cucumber or bell peppers.
- If you prefer a sweeter salad, substitute the honey with maple syrup or agave nectar.
