Description

Ingredients

  • 2 cups fresh corn kernels (about 4 ears of corn)
  • 2 ripe peaches, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh basil, chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

  1. Start by cooking the corn. If using fresh corn, bring a pot of water to a boil, add the corn, and cook for 3-5 minutes until tender. Drain and let cool. If using frozen corn, simply thaw it and set aside.
  2. In a large mixing bowl, combine the cooled corn, diced peaches, cherry tomatoes, red onion, and fresh basil.
  3. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper until well combined.
  4. Pour the dressing over the salad mixture and toss gently to combine all ingredients evenly.
  5. Sprinkle the crumbled feta cheese on top and give it one last gentle toss.
  6. Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
