Ingredients
- 2 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 cup bell pepper, diced (any color)
- 1/2 cup red onion, thinly sliced
- 1/2 cup shredded carrots
- 1/4 cup sunflower seeds
- 1/4 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- In a large salad bowl, combine the mixed salad greens, cherry tomatoes, cucumber, bell pepper, red onion, and shredded carrots. Toss gently to mix the vegetables evenly.
- In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until well combined.
- Drizzle the dressing over the salad and toss gently to coat all the ingredients.
- Top the salad with sunflower seeds and crumbled feta cheese.
- Serve immediately or chill in the refrigerator for about 15 minutes to allow the flavors to meld.
