Description

This bold and cheesy Mexican-inspired casserole combines seasoned beef, creamy soup, beans, and crunchy tortilla chips for the ultimate comfort food. Perfect for potlucks or busy weeknights, it’s a no-fuss recipe with maximum flavor and satisfying texture in every bite.

Ingredients

1 pound ground beef
1 medium onion, diced
1 (10 oz) can diced tomatoes with green chilies (Rotel), undrained
1 (10.5 oz) can cream of mushroom soup
1 (10.5 oz) can cream of chicken soup
1 (15 oz) can corn, drained
1 (15 oz) can black beans, drained and rinsed
1 (10 oz) bag tortilla chips, crushed
2 cups shredded Mexican cheese blend
1 cup sour cream
1 teaspoon garlic powder
1 teaspoon chili powder
1 teaspoon cumin
Salt and pepper, to taste
Fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.

  2. In a large skillet, cook the ground beef and diced onion over medium heat until the beef is browned and the onion is soft. Drain any excess fat.

  3. Stir in the diced tomatoes with green chilies, both soups, corn, black beans, sour cream, and seasonings (garlic powder, chili powder, cumin, salt, and pepper). Mix well.

  4. Layer half of the crushed tortilla chips in the bottom of the prepared baking dish.

  5. Pour the beef and vegetable mixture over the chips and spread evenly.

  6. Top with the remaining chips and sprinkle the shredded cheese evenly on top.

  7. Bake in the preheated oven for 25 to 30 minutes, or until the cheese is melted and bubbly.

  8. Let it cool slightly before serving. Garnish with fresh cilantro and an optional dollop of sour cream.

Notes

You can swap out the ground beef for ground turkey or chicken if preferred.
Add sliced jalapeños or hot sauce if you want an extra spicy kick.
Store leftovers in the refrigerator for up to 3 days and reheat in the oven or microwave.
