Description

Spicy Chipotle Ranch Grilled Chicken Burritos are a perfect blend of smoky heat, creamy ranch, and fresh ingredients wrapped in a soft tortilla. Whether you’re enjoying a casual meal or hosting a gathering, these burritos offer a delightful combination of flavors that will leave everyone asking for more.

Ingredients

For the Burritos:

  • 8 large burrito flour or wheat tortillas
  • 4 cups shredded iceberg lettuce
  • 1½ cups diced Roma, slicing, or vine tomatoes
  • 1 lb grilled chicken (cubed or shredded)
  • 2 cups shredded Mexican/fiesta style or cheddar cheese
  • 1 large Hass avocado (diced)
  • 3 oz crunchy tortilla chips (optional)
  • Avocado ranch dressing (for serving)
  • Chipotle ranch dressing (for serving)

Optional Sides:

  • Cilantro lime or cantina rice (as needed)
  • Mexican style black beans (as needed)

Instructions

  • Prepare the Tortillas:
    • Heat a dry skillet over medium-low heat. Warm each tortilla for a few seconds on each side until they become soft and pliable.
  • Assemble the Burritos:
    • Divide the ingredients among the 8 tortillas. Spoon about ½ cup of shredded lettuce, ⅓ cup of grilled chicken, ¼ cup of shredded cheese, 3 tablespoons of diced tomatoes, and ⅛ of a diced avocado onto the center of each tortilla.
    • Sprinkle a few crunchy tortilla chips on top of the fillings, and drizzle with 1 tablespoon each of chipotle ranch and avocado ranch dressing.
  • Roll the Burritos:
    • Fold the sides of the tortilla inward over the fillings. Roll the tortilla tightly from the bottom up to form a burrito. Ensure that the burrito is well-sealed.
  • Grill the Burritos:
    • Lightly mist a frying pan with cooking spray and heat it over medium heat.
    • Place the burritos seam-side down in the pan. Cook for a few minutes on each side until the tortillas are golden and toasted. You may need to do this in batches.
  • Serve and Enjoy:
    • Remove the burritos from the pan and let them cool for a minute.
    • Serve the burritos with a side of cilantro lime rice or cantina rice and Mexican style black beans for a complete meal.
    • Drizzle extra avocado or chipotle ranch dressing on top if desired.

Notes

  • Fresh Ingredients: Use fresh, high-quality ingredients for the best flavor and texture.
  • Control the Spice: Adjust the amount of chipotle ranch dressing to control the heat level.
  • Make Ahead: Assemble the burritos in advance and store them in the refrigerator for easy grilling later.
