Delicious cookies inspired by the famous Shiroi Koibito, featuring a blend of white and milk chocolate.
Ingredients
- 1 cup unsalted butter, softened
- 1 cup powdered sugar
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup white chocolate chips
- 1/2 cup milk chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Add the vanilla extract and mix until combined.
- Gradually add the flour and salt, mixing until a soft dough forms.
- Fold in the white chocolate and milk chocolate chips until evenly distributed.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a nutty flavor, add 1/2 cup of chopped nuts, such as almonds or hazelnuts, to the dough.
- To enhance the flavor, consider adding a pinch of almond extract along with the vanilla.
