Ingredients
For the Chicken:
- 1 1/2 lb chicken breasts (3–4 pieces)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/3 cup grated Parmesan
- 1/3 cup breadcrumbs (Italian or plain)
- 1/2 teaspoon cracked pepper
- 1/2 – 3/4 teaspoon sea salt
For the Potatoes:
- 2 lb red potatoes, bite-sized
- 1–2 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons grated Parmesan
- Salt and pepper, to taste
For the Green Beans:
- 1 lb fresh green beans, trimmed
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1 tablespoon grated Parmesan (optional)
- Salt and pepper, to taste
Instructions
- Preheat and Prep:
- Preheat the oven to 425°F (220°C). Line a large sheet pan with parchment paper or lightly grease it to prevent sticking.
- Prepare the Potatoes:
- In a medium bowl, toss red potatoes with olive oil, minced garlic, Parmesan, salt, and pepper. Spread the potatoes on one-third of the sheet pan in a single layer. Bake for 10-15 minutes to give them a head start.
- Season the Chicken:
- In the same bowl, mix chicken breasts with olive oil, garlic, Parmesan, breadcrumbs, salt, and pepper. Coat the chicken thoroughly.
- Remove the sheet pan from the oven and place the chicken in the center of the pan.
- Add the Green Beans:
- Toss green beans with olive oil, garlic, Parmesan (if using), salt, and pepper. Spread the green beans on the remaining third of the sheet pan, ensuring they are in a single layer.
- Bake to Perfection:
- Return the sheet pan to the oven and bake for about 25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are golden and crispy.
- For extra crispiness, broil the sheet pan on high for 4-5 minutes at the end.
- Serve and Enjoy:
- Allow the dish to cool for a few minutes before serving. Plate the chicken, potatoes, and green beans together for a balanced meal.
