Description
Savory Chicken Thighs with Garlic Potatoes are a delicious and hearty meal featuring tender chicken thighs and flavorful garlic potatoes, perfect for any dinner.
Ingredients
- 2 pounds bone-in, skin-on chicken thighs
- 1 pound baby potatoes, halved
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine the olive oil, minced garlic, thyme, rosemary, paprika, salt, and pepper. Mix well to create a marinade.
- Add the chicken thighs to the bowl and coat them thoroughly with the marinade. Let them sit for about 15 minutes to absorb the flavors.
- In a separate bowl, toss the halved baby potatoes with a little olive oil, salt, and pepper until evenly coated.
- Arrange the marinated chicken thighs on a large baking sheet, skin side up. Scatter the seasoned potatoes around the chicken.
- Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the skin is crispy, and the potatoes are tender.
- For extra crispiness, broil for an additional 2-3 minutes at the end of cooking.
- Remove from the oven and let rest for 5 minutes before serving. Garnish with chopped parsley.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the marinade.
- Substitute the baby potatoes with sweet potatoes or carrots for a different flavor profile.
