Ingredients
- 1 pound Italian sausage (sweet or spicy, sliced)
- 1 medium onion, chopped
- 1 bell pepper (any color), sliced
- 2 cups zucchini, sliced
- 1 cup cherry tomatoes, halved
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes.
- Add the chopped onion and bell pepper to the skillet. Sauté for about 3-4 minutes until the vegetables start to soften.
- Stir in the zucchini, cherry tomatoes, garlic, oregano, basil, salt, and pepper. Cook for an additional 5-7 minutes, stirring occasionally, until the zucchini is tender and the tomatoes are slightly blistered.
- Remove from heat and garnish with fresh parsley before serving.
Notes
- For a healthier option, use turkey or chicken sausage instead of pork sausage.
