Ingredients
- 1 cup quinoa, rinsed and drained
- 2 cups vegetable broth or water
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced (any color)
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup corn (fresh, frozen, or canned)
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- Lime wedges for serving
Instructions
- In a medium saucepan, combine the rinsed quinoa and vegetable broth (or water). Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes.
- While the quinoa is cooking, heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic and diced bell pepper, cooking for an additional 2-3 minutes until softened.
- Stir in the black beans, corn, chili powder, cumin, paprika, salt, and pepper. Cook for about 5 minutes until heated through.
- Fluff the cooked quinoa with a fork and add it to the skillet with the bean and vegetable mixture. Stir to combine and heat through for another 2-3 minutes.
- To serve, divide the quinoa mixture into bowls. Top with diced avocado, cherry tomatoes, and chopped cilantro. Serve with lime wedges on the side.
Notes
- For added protein, consider topping the bowl with grilled chicken, shrimp, or tofu.
- Customize your toppings by adding shredded cheese, sour cream, or jalapeños for extra flavor.
