Ingredients
- 1 garlic clove, halved
- 1 cup dry white wine (such as Sauvignon Blanc)
- 2 cups shredded Gruyère cheese
- 1 cup shredded Emmental or Swiss cheese
- 1 tbsp cornstarch
- 1 tbsp lemon juice
- Pinch of nutmeg (optional)
- Salt and pepper to taste
For Dipping:
- Crusty bread cubes (baguette, sourdough, or ciabatta)
- Steamed or raw vegetables (broccoli, cauliflower, carrots, etc.)
- Cooked sausage or ham slices
- Fresh fruit (apple or pear slices)
Instructions
- Prepare the Cheese:
Toss shredded Gruyère and Emmental cheeses with cornstarch in a medium bowl. - Infuse the Garlic:
Rub the inside of a fondue pot or saucepan with the cut sides of the garlic clove. Discard the garlic. - Heat the Wine:
Pour the white wine into the pot and heat over medium-low until it begins to simmer. Avoid boiling. - Melt the Cheese:
Gradually add the cheese mixture, stirring constantly in a figure-eight motion, until fully melted and smooth. - Final Touches:
Stir in lemon juice and a pinch of nutmeg (if using). Season with salt and pepper to taste. - Serve:
Transfer the fondue to a fondue pot over low heat. Serve immediately with dippers.

- Substitute wine with chicken or vegetable broth for a non-alcoholic version, adding a splash of apple cider vinegar or lemon juice for acidity.
