A deliciously simple recipe for Pumpkin Spice Flourless Bread that is perfect for fall.
Ingredients
- 1 cup canned pumpkin puree
- 1/2 cup almond butter
- 1/4 cup honey or maple syrup
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
- 1/4 cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large mixing bowl, combine the pumpkin puree, almond butter, honey (or maple syrup), eggs, and vanilla extract. Mix until smooth and well combined.
- Add the baking soda, pumpkin pie spice, and salt to the mixture. Stir until fully incorporated.
- If using, fold in the chopped walnuts or pecans for added texture.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
- For a sweeter bread, increase the honey or maple syrup to 1/3 cup.
- Add chocolate chips or dried cranberries for a delicious twist.
