Description
A refreshing tropical drink combining pineapple, coconut, and mint for a delightful mojito experience.
Ingredients
- 2 cups fresh pineapple, diced
- 1 cup coconut water
- 1/2 cup fresh lime juice (about 4 limes)
- 1/4 cup fresh mint leaves, plus extra for garnish
- 1/4 cup simple syrup (adjust to taste)
- 1 cup white rum
- Club soda, to top
- Ice cubes
Instructions
- In a blender, combine the diced pineapple and coconut water. Blend until smooth. Strain the mixture through a fine mesh sieve into a large pitcher, discarding the pulp.
- Add the fresh lime juice, mint leaves, and simple syrup to the pitcher. Use a muddler or the back of a spoon to gently press the mint leaves to release their flavor.
- Stir in the white rum until well combined.
- Fill glasses with ice cubes and pour the mojito mixture over the ice, filling each glass about two-thirds full.
- Top each glass with club soda to your desired fizziness. Stir gently to combine.
- Garnish with additional mint leaves and a slice of lime, if desired. Serve immediately.
Notes
- For a non-alcoholic version, replace the rum with additional coconut water and increase the club soda for a refreshing mocktail.
- You can also experiment with other fruits like mango or strawberries for a tropical twist.
