Ingredients
- 4 ripe peaches, pitted and sliced
- 2 cups fresh arugula or spinach
- 1 cup ricotta cheese
- 1/4 cup honey
- 1 tablespoon lemon juice

- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh mint (optional)
- 1/4 cup sliced almonds, toasted
Instructions
- In a large bowl, combine the sliced peaches and arugula or spinach.
- In a separate small bowl, whisk together the ricotta cheese, honey, lemon juice, salt, and black pepper until smooth and creamy.
