Bursting with the natural sweetness of ripe peaches and balanced by zesty lemon juice, it’s a thirst-quenching drink perfect for hot days, garden parties, or picnic coolers. Ingredients
For the peach syrup (yields about 1 cup):
1.16 lb ripe peaches (about 3 large), peeled and chopped (about 2 cups)
2 cups water
½ cup sugar (or use brown sugar, honey, or stevia)
For the lemonade:
⅓ cup lemon juice (about 2 lemons)
3 cups water (or sparkling water, coconut water, or substitute up to ¼ cup alcohol)
Lemon slices, for garnish
Peach slices, for garnish
Mint leaves, optional
Ice cubes, optional
Instructions
-
In a saucepan over medium-high heat, combine the chopped peaches, sugar, and 2 cups of water. Bring to a boil, then reduce heat and simmer for 5 to 10 minutes until peaches are soft and mushy.
-
Remove from heat and allow the mixture to cool for 30 minutes. Strain through a fine mesh sieve to extract the syrup (you should get about 1 cup).
-
Juice the lemons and set aside the juice (zest them first if you’d like to use it for garnish or another recipe).
-
In a large pitcher, combine the peach syrup, lemon juice, and 3 cups of cold water or your chosen liquid.
-
Stir well and adjust to taste—add more syrup for sweetness or lemon juice for tartness.
-
Serve over ice in glasses and garnish with lemon slices, peach slices, and fresh mint if desired.
Notes
You can prepare the peach syrup in advance and store it in the fridge for up to one week. This lemonade can easily be made into a sparkling or adult version by substituting soda water or a splash of vodka or white wine. For extra flair, freeze some peach slices and use them as fruity ice cubes.
