Patriotic Cheesecake Pops are delightful treats perfect for celebrations, featuring a creamy cheesecake center coated in white chocolate and festive sprinkles.


Ingredients

  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 1 cup white chocolate chips
  • 1 tablespoon coconut oil
  • Red and blue sprinkles
  • Popsicle sticks

Instructions

  1. In a mixing bowl, combine the softened cream cheese, powdered sugar, vanilla extract, and sour cream. Beat until smooth and creamy.
  2. In a separate bowl, mix the graham cracker crumbs and melted butter until well combined.
  3. Line a baking sheet with parchment paper. Using a tablespoon, scoop the cheesecake mixture and roll it into balls. Place the balls on the prepared baking sheet.
  4. Insert a popsicle stick into each cheesecake ball and freeze for at least 2 hours, or until firm.
  5. In a microwave-safe bowl, melt the white chocolate chips and coconut oil in 30-second intervals, stirring in between until smooth.
  6. Dip each frozen cheesecake pop into the melted chocolate, allowing any excess to drip off. Immediately sprinkle with red and blue sprinkles before the chocolate hardens.
  7. Place the decorated pops back on the parchment-lined baking sheet and return to the freezer for 30 minutes to set.
  8. Serve chilled and enjoy your festive treats!

Notes

  • For a chocolate twist, substitute half of the white chocolate with dark chocolate.
  • To make it easier to dip, add a little more coconut oil to the melted chocolate.
