Ingredients
- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/4 cup sour cream
- 1 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 1 cup white chocolate chips
- 1 tablespoon coconut oil
- Red and blue sprinkles
- Popsicle sticks
Instructions
- In a mixing bowl, combine the softened cream cheese, powdered sugar, vanilla extract, and sour cream. Beat until smooth and creamy.
- In a separate bowl, mix the graham cracker crumbs and melted butter until well combined.
- Line a baking sheet with parchment paper. Using a tablespoon, scoop the cheesecake mixture and roll it into balls. Place the balls on the prepared baking sheet.
- Insert a popsicle stick into each cheesecake ball and freeze for at least 2 hours, or until firm.
- In a microwave-safe bowl, melt the white chocolate chips and coconut oil in 30-second intervals, stirring in between until smooth.
- Dip each frozen cheesecake pop into the melted chocolate, allowing any excess to drip off. Immediately sprinkle with red and blue sprinkles before the chocolate hardens.
- Place the decorated pops back on the parchment-lined baking sheet and return to the freezer for 30 minutes to set.
- Serve chilled and enjoy your festive treats!
Notes
- For a chocolate twist, substitute half of the white chocolate with dark chocolate.
- To make it easier to dip, add a little more coconut oil to the melted chocolate.
