Ingredients

For the Donuts:

  • 1 1/4 cups all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1 teaspoon baking powder
  • 3/4 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1/4 cup pumpkin puree
  • 2 1/2 tablespoons melted butter (or coconut oil for vegan)
  • 1/2 cup milk (or almond milk for vegan)

For the Coating:

  • 3 tablespoons melted butter (or coconut oil for vegan)
  • 1 cup granulated sugar
  • 1 1/2 tablespoons ground cinnamon

Instructions

  1. Preheat the Oven and Prepare the Pan:
    • Preheat the oven to 350°F (175°C).
    • Grease a donut pan thoroughly to prevent sticking.
  2. Mix the Dry Ingredients:
    • In a large mixing bowl, whisk together the flour, brown sugar, baking powder, pumpkin pie spice, and salt.
    • Ensure the mixture is free of lumps and well combined.
  3. Combine the Wet Ingredients:
    • In a separate bowl, stir together the pumpkin puree, melted butter (or coconut oil), and milk (or almond milk).
    • Mix until smooth.
  4. Blend Wet and Dry Ingredients:
    • Gradually pour the wet mixture into the bowl of dry ingredients.
    • Gently fold the ingredients together until just combined. Avoid overmixing to keep the donuts light and fluffy.
  5. Fill the Donut Pan:
    • Spoon or pipe the batter evenly into the prepared donut pan, filling each cavity about 3/4 full.
  6. Bake the Donuts:
    • Place the pan in the preheated oven and bake for 10-11 minutes, or until the donuts spring back when lightly touched.
    • Remove the pan from the oven and let the donuts cool for 5 minutes before transferring them to a wire rack to cool completely.
  7. Prepare the Cinnamon Sugar Coating:
    • In a shallow bowl, mix the granulated sugar and ground cinnamon.
    • In a separate bowl, melt the butter (or coconut oil).
  8. Coat the Donuts:
    • Dip each cooled donut into the melted butter, ensuring it is evenly coated.
    • Roll the butter-coated donut in the cinnamon-sugar mixture until completely covered.
    • Place the coated donuts back on the wire rack and repeat with the remaining donuts.

Notes

  • Avoid overmixing the batter to ensure light and fluffy donuts.
  • Fresh spices enhance the flavor—use fresh pumpkin pie spice and cinnamon for the best results.
  • Store leftovers in an airtight container at room temperature for up to three days.
