- 1/2 cup packed light brown sugar
- 1 teaspoon baking powder
- 3/4 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
- 1/4 cup pumpkin puree
- 2 1/2 tablespoons melted butter (or coconut oil for vegan)
- 1/2 cup milk (or almond milk for vegan)
For the Coating:
- 3 tablespoons melted butter (or coconut oil for vegan)
- 1 cup granulated sugar
- 1 1/2 tablespoons ground cinnamon
Instructions
- Preheat the Oven and Prepare the Pan:
- Preheat the oven to 350°F (175°C).
- Grease a donut pan thoroughly to prevent sticking.
- Mix the Dry Ingredients:
- In a large mixing bowl, whisk together the flour, brown sugar, baking powder, pumpkin pie spice, and salt.
- Ensure the mixture is free of lumps and well combined.
- Combine the Wet Ingredients:
- In a separate bowl, stir together the pumpkin puree, melted butter (or coconut oil), and milk (or almond milk).
- Mix until smooth.
- Blend Wet and Dry Ingredients:
- Gradually pour the wet mixture into the bowl of dry ingredients.
- Gently fold the ingredients together until just combined. Avoid overmixing to keep the donuts light and fluffy.
- Fill the Donut Pan:
- Spoon or pipe the batter evenly into the prepared donut pan, filling each cavity about 3/4 full.
- Bake the Donuts:
- Place the pan in the preheated oven and bake for 10-11 minutes, or until the donuts spring back when lightly touched.
- Remove the pan from the oven and let the donuts cool for 5 minutes before transferring them to a wire rack to cool completely.
- Prepare the Cinnamon Sugar Coating:
- In a shallow bowl, mix the granulated sugar and ground cinnamon.
- In a separate bowl, melt the butter (or coconut oil).
- Coat the Donuts:
- Dip each cooled donut into the melted butter, ensuring it is evenly coated.
- Roll the butter-coated donut in the cinnamon-sugar mixture until completely covered.
- Place the coated donuts back on the wire rack and repeat with the remaining donuts.
Notes
- Avoid overmixing the batter to ensure light and fluffy donuts.
