Description

Mint Chocolate Chip Protein Balls are a quick and easy no-bake treat packed with protein and delicious mint chocolate flavor.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup chocolate protein powder
  • 1/4 cup almond butter
  • 1/4 cup honey
  • 1/4 cup mini chocolate chips
  • 1/4 teaspoon peppermint extract
  • Pinch of salt
  • 12 tablespoons water (as needed)

Instructions

  1. In a large mixing bowl, combine the rolled oats, chocolate protein powder, almond butter, honey, mini chocolate chips, peppermint extract, and salt.
  2. Mix all the ingredients together until well combined. If the mixture is too dry, add water one tablespoon at a time until it reaches a sticky consistency that holds together.
  3. Once the mixture is well combined, use your hands to roll it into small balls, about 1 inch in diameter.
  4. Place the protein balls on a baking sheet lined with parchment paper.
  5. Refrigerate for at least 30 minutes to firm up the protein balls.
  6. Store any leftovers in an airtight container in the refrigerator for up to one week.

  • For a nut-free version, substitute almond butter with sunflower seed butter.
