Description
Mint Chocolate Chip Protein Balls are a quick and easy no-bake treat packed with protein and delicious mint chocolate flavor.
Ingredients
- 1 cup rolled oats
- 1/2 cup chocolate protein powder
- 1/4 cup almond butter
- 1/4 cup honey
- 1/4 cup mini chocolate chips
- 1/4 teaspoon peppermint extract
- Pinch of salt
- 1–2 tablespoons water (as needed)
Instructions
- In a large mixing bowl, combine the rolled oats, chocolate protein powder, almond butter, honey, mini chocolate chips, peppermint extract, and salt.
- Mix all the ingredients together until well combined. If the mixture is too dry, add water one tablespoon at a time until it reaches a sticky consistency that holds together.
- Once the mixture is well combined, use your hands to roll it into small balls, about 1 inch in diameter.
- Place the protein balls on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up the protein balls.
- Store any leftovers in an airtight container in the refrigerator for up to one week.
Notes
- For a nut-free version, substitute almond butter with sunflower seed butter.
- Add 1/4 cup of shredded coconut for extra texture and flavor.
