Description
A delicious and healthy Mediterranean Hummus Toast topped with fresh vegetables and za’atar seasoning.
Ingredients
- 1 cup hummus
- 4 slices whole grain bread
- 1 medium cucumber, thinly sliced
- 1 medium tomato, diced
- 1/4 red onion, thinly sliced
- 1/4 cup crumbled feta cheese
- 2 tablespoons olive oil
- 2 teaspoons za’atar seasoning
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Toast the whole grain bread slices until golden brown and crispy.
- Spread a generous layer of hummus on each slice of toasted bread.
- Top the hummus with sliced cucumber, diced tomato, and red onion.
- Sprinkle crumbled feta cheese over the top of each toast.
- Drizzle olive oil evenly across all toasts.
- Sprinkle za’atar seasoning over the toasts, and season with salt and pepper to taste.
- Garnish with fresh parsley if desired, and serve immediately.
Notes
- For a spicier kick, add sliced jalapeños or a drizzle of hot sauce on top.
- Substitute the feta cheese with goat cheese or omit it for a dairy-free version.
