Description

A creamy, flavorful one-pan meal that will have everyone falling in love at first bite. Perfect for a romantic dinner or a cozy family night!

Ingredients

  • 1 tbsp oil (from the sun-dried tomatoes jar)
  • 1 ½2 lbs boneless, skinless chicken breasts (cut into 1-inch pieces)
  • 3 cloves garlic (minced)
  • 1 cup sun-dried tomatoes (drained and chopped)
  • 12 tsp paprika
  • 1 tsp dried oregano
  • ½ tsp red pepper flakes
  • 1 cup (8 oz) dry orzo pasta
  • 2 ½ cups chicken stock
  • 1 cup heavy cream (room temperature)
  • 2 cups baby spinach (packed)
  • 1 cup grated Parmesan cheese
  • Salt and pepper (to taste)
  • Fresh basil (for garnish)

Instructions

  1. Sizzle & Sear: Heat oil in a large, deep skillet over medium-high heat. Add chicken and cook for 5-6 minutes until golden brown. Reduce heat to medium.
  2. Aromatic Affair: Stir in garlic, sun-dried tomatoes, paprika, oregano, and red pepper flakes. Let the flavors develop for 2-3 minutes.
  3. Orzo’s Grand Entrance: Add orzo and chicken stock. Bring to a boil, then reduce heat, cover, and simmer for 10-12 minutes, stirring occasionally.
  4. The Creamy Embrace: Pour in the heavy cream, add spinach, and stir until wilted. Let the sauce thicken for 1-2 minutes.
  5. The Finishing Touch: Stir in grated Parmesan until melted. Taste, adjust seasoning, and serve with fresh basil.

Notes

  • Substitute chicken thighs for a juicier texture.
  • For a lighter version, use half-and-half instead of heavy cream.
  • Add mushrooms or bell peppers for extra veggies.
  • Store leftovers in an airtight container in the fridge for up to 3 days.

Enjoy this indulgent and comforting dish that’s guaranteed to impress!
