Ingredients

Bread Ingredients
  • 1 cup white sugar
  • 1/3 cup melted butter
  • 2 large eggs
  • 3 tablespoons lemon juice
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • ½ cup milk
  • 1 cup fresh or frozen blueberries
  • ½ cup chopped walnuts
  • 2 tablespoons grated lemon zest
Glaze Topping
  • ¼ cup white sugar
  • 2 tablespoons lemon juice

Instructions

  • Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
    • Grease an 8×4-inch loaf pan or line it with parchment paper for easy removal.
  • Prepare the Batter:
    • In a large mixing bowl, beat sugar, melted butter, eggs, and lemon juice until smooth.
    • In another bowl, combine flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, alternating with milk. Mix until just combined.
    • Fold in the blueberries, walnuts, and lemon zest.

Tip: Coat blueberries in a tablespoon of flour to keep them evenly distributed in the batter.

  • Bake the Bread:
    • Pour the batter into the prepared loaf pan.
    • Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
  • Prepare the Glaze:
    • While the bread bakes, mix sugar and lemon juice in a small bowl until smooth.
  • Glaze the Bread:
    • Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
    • Drizzle the glaze over the warm bread and allow it to soak in as the bread cools completely.

Notes

  • Use fresh lemon juice and zest for the best flavor.
  • Avoid overmixing the batter to maintain a light and fluffy texture.
  • For a gluten-free option, substitute all-purpose flour with a gluten-free blend.
