Description

A delicious and comforting twist on classic lasagna, this soup delivers all the rich flavors you love in a warm, one-pot meal. Perfect for cozy nights!

Ingredients

  • 2 tablespoons olive oil
  • 1 pound lean ground beef
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 (15-ounce) can diced tomatoes (do not drain)
  • 1 (15-ounce) can tomato sauce or tomato puree
  • 1/2 (6-ounce) can tomato paste
  • 4 cups chicken broth + 1 cup water
  • 1 tablespoon Italian seasoning
  • 1 teaspoon sea salt
  • Black pepper, to taste
  • 8 ounces bowtie pasta (uncooked)
  • 1/2 cup ricotta cheese
  • 2 ounces mozzarella cheese, shredded (about 1/2 cup)
  • 1/4 cup parmesan cheese, shaved or grated
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Build the Flavor Base: Heat olive oil in a large soup pot over medium heat. Add ground beef and cook until browned. Stir in diced onion and minced garlic; sauté until fragrant.
  2. Create the Savory Broth: Mix in diced tomatoes, tomato sauce, and tomato paste. Pour in chicken broth and water, stirring well. Season with Italian seasoning, sea salt, and black pepper. Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.
  3. Cook the Pasta to Perfection: Stir in the uncooked bowtie pasta. Simmer for 10-15 minutes, stirring occasionally, until pasta is al dente.
  4. Serve It Up Right: Ladle soup into bowls. Top with ricotta, mozzarella, parmesan, and fresh parsley. Enjoy while hot!

Notes

  • Swap ground beef for ground turkey or Italian sausage for a different twist.
  • Use gluten-free pasta for a gluten-free version.
  • Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.

A bowl of this Lasagna Soup pairs beautifully with crusty garlic bread or a warm bread bowl for an extra cozy meal!
