Ingredients
- 2 tablespoons olive oil
- 1 pound lean ground beef
- 1 large onion, diced
- 4 cloves garlic, minced
- 1 (15-ounce) can diced tomatoes (do not drain)
- 1 (15-ounce) can tomato sauce or tomato puree
- 1/2 (6-ounce) can tomato paste
- 4 cups chicken broth + 1 cup water
- 1 tablespoon Italian seasoning
- 1 teaspoon sea salt
- Black pepper, to taste
- 8 ounces bowtie pasta (uncooked)
- 1/2 cup ricotta cheese
- 2 ounces mozzarella cheese, shredded (about 1/2 cup)
- 1/4 cup parmesan cheese, shaved or grated
- 1/4 cup fresh parsley, chopped
Instructions
- Build the Flavor Base: Heat olive oil in a large soup pot over medium heat. Add ground beef and cook until browned. Stir in diced onion and minced garlic; sauté until fragrant.
- Create the Savory Broth: Mix in diced tomatoes, tomato sauce, and tomato paste. Pour in chicken broth and water, stirring well. Season with Italian seasoning, sea salt, and black pepper. Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.
- Cook the Pasta to Perfection: Stir in the uncooked bowtie pasta. Simmer for 10-15 minutes, stirring occasionally, until pasta is al dente.
- Serve It Up Right: Ladle soup into bowls. Top with ricotta, mozzarella, parmesan, and fresh parsley. Enjoy while hot!
