Ingredients
1 lb ground beef (80/20 for best flavor)
½ onion, chopped (or 1 teaspoon onion powder for fewer carbs)
1 teaspoon garlic powder (or 2 cloves fresh minced garlic)
½ teaspoon oregano
½ teaspoon pepper
Salt to taste
3 cups low-carb marinara sauce (Rao’s or Mezzetta’s recommended)
10 oz frozen steamed riced cauliflower (or fresh, pulsed cauliflower)
½ cup beef broth
2 cups mozzarella cheese, shredded (freshly shredded melts best!)
Instructions
- Brown the Beef: Heat a large oven-safe skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks (about 5-7 minutes). Drain excess grease.
- Sauté the Aromatics: Stir in chopped onions and cook until softened (about 3 minutes). Add garlic powder, oregano, salt, and pepper to enhance the flavors.
- Mix in the Cauliflower Rice & Sauce: Steam the riced cauliflower according to package instructions, then strain well. Add it to the skillet along with marinara sauce and beef broth. Stir to combine.
- Simmer to Perfection: Let the mixture simmer uncovered for 15 minutes, allowing the flavors to meld and the sauce to thicken.
- Melt the Cheese: Sprinkle shredded mozzarella evenly over the top. Transfer the skillet to a preheated 400°F oven and bake for 5 minutes. Then, move it to the top rack and broil for 1-2 minutes until the cheese is bubbly and golden.
- Serve & Enjoy: Remove from the oven and serve hot! Pair with a fresh side salad or roasted keto-friendly veggies for a complete meal.
