Ingredients

For the Pasta:

  • 2½ cups grape tomatoes
  • 8 ounces block feta cheese
  • 12 ounces bow-tie pasta
  • 4 cups water or chicken broth

For the Chicken:

  • 2 boneless, skinless chicken breasts, sliced into bite-sized pieces
  • 1½ tablespoons Cajun seasoning
  • 2 tablespoons olive oil

For Seasoning and Garnish:

  • 3 tablespoons olive oil (divided)
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ cup fresh basil, chopped

Instructions

  1. Prepare the Chicken:
    • Toss chicken with 1 tablespoon Cajun seasoning.
    • Set Instant Pot to sauté mode, add 2 tablespoons olive oil, and cook chicken until browned on both sides (4–5 minutes). Remove chicken and set aside.
  2. Cook the Pasta and Tomatoes:
    • Add grape tomatoes, 3 tablespoons olive oil, and Italian seasoning to the Instant Pot.
    • Place the feta block in the center of the tomatoes.
    • Pour in water or broth and stir gently. Add uncooked bow-tie pasta, ensuring it’s submerged in liquid.
  3. Pressure Cook the Dish:
    • Close the lid and set the valve to sealing position.
    • Cook on high pressure for 5 minutes. Perform a quick release by carefully turning the valve to venting.
  4. Combine Ingredients:
    • Open the lid and stir the melted feta cheese and burst tomatoes into the pasta to create a creamy sauce.
    • Add the cooked chicken back to the pot and toss everything together until well combined.
  5. Garnish and Serve:
    • Sprinkle fresh basil over the pasta and serve immediately.
